Hemp Seed Coconut Bites

We prepared a few trays of these tasty treats when we did an In Store promotion day at Natural Way, Letterkenny. They went down a treat with many of you and as requested we have put the recipe up here for anyone looking to bake something tasty, vegan and very nutritional. Enjoy…

Cook time – 10 mins

Ingredients
– 510grams cup of unsweetened, shredded coconut toasted
– 340grams cashew butter
– 340grams of (hempful) hemp seeds
– 114grams cup of maple syrup
– 1tsp cinnamon

Instructions

  1. Pre-heat oven to 160
  2. Spread the coconut on a baking pan and bake for approx 5-10 mins or until brown and toasted
  3. While the coconut is toasting, mix the other ingredients together in a bowl
  4. Add toasted coconut mix
  5. Press the mixture into a wax paper or Saran-lined 8×8 baking dish.
  6. Refrigerate for at least 3 hours, preferably overnight. Make sure you spend some time really pressing it down into the pan!
  7. Once it’s set, lift from pan and cut into 16 squares
  8. Store in container in the fridge
